I do love chocolate brownies, but only when they are homemade, shop bought brownies are not the same! My brownie recipe are a little famous among our family friends, I made some recently, so I photographed them to share the recipe with you! To make the chocolate brownies, you will need:
115g of unsalted butter
170g caster sugar
2 free-range eggs
40g of milk chocolate chips
40g of white chocolate chunks
55g of hazelnuts (optional)
1 teaspoon of vanilla extract
1 teaspoon of instant coffee
1 tablespoon of warm water
80g of plain flour
30g of cocoa powder
1 teaspoon of baking powder
Icing sugar for dusting
It looks like quite a lot of ingredients but a lot of them you can adjust to your taste. Sometimes I'll only use half the chocolate, or just one type of chocolate. Sometimes I use pecans instead of hazelnuts, sometimes I add cherries, sometimes I leave them plain. You get the gist, make your brownie personal to your taste!
To make the brownies, you first need to cream the butter and sugar in a bowl and then add the eggs into the mixture one at a time. Sift in the flour, baking powder and the cocoa powder and fold into the mixture. Next dissolve your instant coffee into 1 tablespoon of warm water and stir into the mixture. Add your chocolate and any extras you might have to personalise your brownie! Put your brownies into a tin which has been lined with greaseproof paper. Cook in the oven for 30-40 minutes and then remove to cool slighly. Cut into squares and dust with icing sugar, they are best served warm with ice cream!
