Ultimate Steak & Chips | Recipe










A couple of weekends ago we made some homemade steak and chips and I wanted to share the recipe and pictures with you!

We picked up some rump steak from the meat counter in Sainsbury's, the butcher recommended a piece at around 200g each. We picked a recipe from my new cook book 'Jamie Oliver's Money Saving Meals, for which we made homemade potato wedges, garlic green beans and then a mushroom sauce and a peppercorn sauce.

For the steak: take the meat out of the fridge an hour before cooking, seal the meat in a hot frying pan, cook a minute on each side and then finish in the grill.

For the potato wedges: wash the potatoes and cut into wedges, toss in oil and season with salt and pepper. Cook in the oven at 190 degrees for around 40 minutes.

For the mushroom sauce: cook mushrooms and onions in a frying pan until golden brown, add 50mls of cream and a splash of water and cook to thicken. Add more water if it gets too thick and add more cream if desired!

For the green beans: fry some green beans in a dry pan, chuck in slices of garlic and leave to cook for 4-5 minutes until al dente!

For the peppercorn sauce: heat 50g of butter in a frying pan on a medium heat, when the butter starts to foam add two shallots and cook for 1-2 minutes until softened. Add one clove of garlic, 2 tablespoons of black peppercorns which have been lightly crushed and cook for 2-3 minutes. Add 50ml of brandy and light with a match, allow the flames to flare and cool! Add 200ml of beef stock and reduce the stock by half, when reduced add 250ml of double cream and serve!



And there you have it, our version of the perfect steak and chips!
