Carrot Cake Recipe


Me and Chris love carrot cake, it's probably one of our favourites, but despite all our baking we'd never made some.
So one day when we were walking round Sainsburys doing our weekly shop, we decided to go for it and try out a carrot cake! It turned out so well that I thought I'd share the recipe with you! If you have any amazing recipes, leave me a link below, I'd love to see your creations!

You will need:
  • 125ml Sunflower Oil
  • 175g Light Muscovada Sugar
  • 3 eggs
  • 175g grated carrots
  • 85g Sultanas
  • 55g Walnuts
  • Rind of one orange
  • 175g Self-raising flour
  • 1tsp of ground cinnamon
  • 1/2 tsp of grated nutmeg
  • (vanilla butter cream)
  • White chocolate carrots to top (we got ours from Sainsburys)
Preheat the oven to 180 degrees
In a bowl beat together the oil, the sugar and the eggs
Stir in the grated carrots, sultanas, walnuts, orange
Sift the flour and the spices and stir into cake mixture
Spoon mixture into chosen cake tin
Cook for 40-45 minutes and then leave to cool
Prepare your chosen topping (we chose vanilla butter cream but the traditional topping is a cream cheese topping) and pipe onto the cakes.
Finally top with your chosen decoration, we chose the little carrots from Sainsburys.
